If you, like me often drunkenly offer to make peoples’ birthday cakes for them, then this recipe is for you! I am constantly making birthday cakes, and not that I don’t enjoy it, I do but they can seriously add up! This basically requires 3 simple ingredients, and can be done in less than a half an hour. Mix it up with your favourite flavours and enjoy!
Makes 9′ cake tin
Ingredients:
4 cups of rice krispies
2 pints of your favourite ice-cream ( I used caramel, mint would be great too!)
8oz of milk cooking chocolate
crushed flake for décor (optional)
Directions:
1) Spray a 9′ cake tin with some baking spray or grease with a tiny bit of butter.
2) Melt your chocolate and mix in the rice krispies as you would for rice krispie buns.
3) Empty the chocolate krispies into the cake tin and press down and up the sides of the tin with a wooden spoon.( this part will be messy, and don’t worry if you don’t get it perfect. Place in the freezer for 10 minutes to firm up.
4) Remove from the freezer and spoon in your favourite ice-cream. Level it with the back of the spoon and crush some flake chocolate on top. Place back in the freezer for a further 10 minutes or until firm. Remove from freezer and voilà! Easy Peasy!
